Hi. Wouldn' t it be possible to have map data of openstreetmap.org displayed on the ipod?

Download the images and view it with a picture viewer. You can use rockbox jpeg viewerto zoom in and out.

That's a completely different approach that has nothing to do with open street map. One is a pictureviewer, the other maps singletiles and calculates coordinates. And there is a lot of data to use. You could ask your ipod: E.g. where is the next post office from here?
